Ingredients
Dry Ingredients:
-
1¾ cups all-purpose flour
-
1 tsp baking soda
-
½ tsp baking powder
-
½ tsp salt
-
1 tsp ground cinnamon (optional, but delicious)
Wet Ingredients:
-
3 large ripe bananas, mashed
-
½ cup honey
-
2 large eggs
-
⅓ cup plain Greek yogurt (or sour cream)
-
¼ cup vegetable oil (or melted coconut oil)
-
2 tsp pure vanilla extract
Optional Add-Ins:
-
½ cup chopped walnuts or pecans
-
½ cup chocolate chips
-
1 tbsp flaxseed meal or chia seeds
Instructions
Step 1: Prep Your Pan and Oven
-
Preheat your oven to 350°F (175°C).
-
Grease a 9×5-inch loaf pan or line with parchment paper for easy removal.
Step 2: Mix the Dry Ingredients
3. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
Step 3: Combine the Wet Ingredients
4. In a large bowl, mash the bananas until smooth (some small lumps are fine).
5. Add honey, eggs, Greek yogurt, oil, and vanilla extract. Whisk until well combined and smooth.
Step 4: Bring It All Together
6. Gradually add the dry ingredients to the wet ingredients. Stir gently until just combined—do not overmix.
7. Fold in any optional add-ins like nuts or chocolate chips.
Step 5: Bake the Banana Bread
8. Pour the batter into the prepared loaf pan and smooth the top.
9. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
10. If the top starts browning too quickly, tent it with foil for the last 10–15 minutes.
Step 6: Cool and Slice
11. Let the banana bread cool in the pan for 10–15 minutes.
12. Transfer to a wire rack to cool completely before slicing.
Notes
Use Very Ripe Bananas – The riper the bananas, the sweeter and more flavorful the bread.
Don’t Overmix – Stir until just combined to keep the bread tender.
Check for Doneness – A toothpick inserted in the center should come out mostly clean.
Add Texture – A sprinkle of oats, nuts, or seeds on top before baking adds visual and flavor appeal.
Double the Recipe – Make one for now and one to freeze for later!
