Ingredients
For the Cornbread Poppers:
• 1 cup yellow cornmeal
• 1 cup all-purpose flour
• 1 tbsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 2 tbsp sugar (optional for added sweetness)
• 1 cup buttermilk (or 1 cup milk + 1 tbsp lemon juice)
• 2 large eggs
• ¼ cup melted butter or vegetable oil
• ¼ cup honey
• 1 cup corn kernels (fresh, canned, or thawed from frozen)
• Optional: ½ cup shredded cheddar cheese, 1 finely chopped jalapeño
For the Honey Butter Glaze:
• 3 tbsp unsalted butter
• 2 tbsp honey
• Pinch of salt
Instructions
Step 1: Preheat & Prep

Preheat your oven to 375°F (190°C).

Grease or line a mini muffin pan.
Step 2: Mix Dry Ingredients

In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and sugar (if using).
Step 3: Combine Wet Ingredients

In another bowl, whisk buttermilk, eggs, melted butter, and honey until smooth.
Step 4: Bring It All Together

Stir the wet ingredients into the dry mixture until just combined.

Gently fold in corn, and optional cheese or jalapeño.
Step 5: Fill & Bake

Spoon the batter into the prepared muffin pan, filling each cup about ¾ full.

Bake for 12–15 minutes, or until golden and a toothpick comes out clean.

Let cool slightly before removing from the pan.
Step 6: Make & Apply Honey Butter Glaze

Melt butter with honey and a pinch of salt in a saucepan or microwave.

Stir well and brush generously over warm poppers.
