  • 2 ¼ tsp (1 packet) instant yeast

  • 1 ½ tsp salt

Wet Ingredients:

  • 1 cup cottage cheese (room temperature, small curd or blended smooth)

  • 2 large eggs (room temperature)

  • ¼ cup warm milk (about 110°F)

  • 2 tbsp honey

  • 2 tbsp olive oil or melted butter

Optional Topping:

  • 1 egg yolk + 1 tbsp milk (for egg wash)

  • 1 tbsp rolled oats or sesame seeds


Instructions

Step 1: Activate the Yeast
In a small bowl, whisk together the warm milk and honey.
Sprinkle the yeast over the top and let it sit for 5–10 minutes until foamy.
This step ensures your yeast is active and ready to rise.

Step 2: Mix the Wet Ingredients
In a large mixing bowl, combine the cottage cheese, eggs, and olive oil.
If you prefer a smoother texture, blend the cottage cheese in a food processor or blender before mixing.
Add the activated yeast mixture and stir to combine.

Step 3: Add the Dry Ingredients
Gradually mix in the flour and salt, stirring until a sticky dough forms.
Transfer to a floured surface and knead by hand for 8–10 minutes (or use a stand mixer with dough hook for 5–6 minutes), until smooth and elastic.
The dough should be slightly tacky but not too sticky.

Step 4: First Rise
Place the dough in a greased bowl and cover with a kitchen towel or plastic wrap.
Let it rise in a warm, draft-free place for 1–1.5 hours, or until doubled in size.

Step 5: Shape the Dough
Punch down the dough to release air.
Turn it out onto a lightly floured surface and shape into a log.
Place in a greased 9×5-inch loaf pan and smooth the top.

Step 6: Second Rise
Cover the loaf with a towel and let rise again for 30–45 minutes, until the dough is about 1 inch above the rim of the pan.

Step 7: Add Topping (Optional)
Preheat your oven to 350°F (175°C).
Brush the loaf with egg wash and sprinkle with oats or sesame seeds for a golden, decorative crust.

Step 8: Bake the Bread
Bake for 35–40 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.
The internal temperature should read 190°F when done.

Step 9: Cool and Slice
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Slice thick for sandwiches or thin for toast.
