Ingredients

Scale

For the Biscuits:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder (optional, for extra flavor)

  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)

  • 1 tbsp fresh chives, chopped

  • 1 tbsp fresh parsley, chopped

  • 1 cup cottage cheese (small curd preferred)

  • ½ cup plain Greek yogurt or sour cream

  • 4 tbsp unsalted butter, melted

  • 1 large egg

Optional Topping:

  • 1 tbsp melted butter

  • Pinch of sea salt or additional herbs for sprinkling

Instructions

Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper or lightly grease it.

Step 2: Mix Dry Ingredients
In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder.
Stir in chopped herbs (rosemary, chives, parsley).

Step 3: Add Wet Ingredients
In another bowl, whisk together cottage cheese, yogurt (or sour cream), melted butter, and egg until smooth.
Pour the wet mixture into the dry ingredients and stir until just combined.
Do not overmix—the dough should be thick and slightly sticky.

Step 4: Scoop the Biscuits
Using a spoon or scoop, drop 10–12 equal mounds of dough onto the prepared baking sheet.
Space them out slightly as they will expand while baking.

Step 5: Bake to Golden Perfection
Bake for 14–17 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
Rotate the pan halfway through baking for even color.

Step 6: Optional Finishing Touch
Brush the tops with a little melted butter right out of the oven.
Sprinkle with a pinch of sea salt or extra herbs for added flavor and visual appeal.

Step 7: Serve Warm
Let biscuits cool for 5 minutes on the tray before serving.
Enjoy warm with butter, honey, or your favorite spread.

Notes

Use Full-Fat Cottage Cheese – For richer flavor and better texture.
Don’t Overmix – Stir just until combined for fluffy results.
Herb It Up – Feel free to experiment with thyme, dill, or tarragon.
Scoop Evenly – A cookie or ice cream scoop ensures uniform baking.
Serve Fresh – Best eaten warm, but still delicious at room temperature.
