  • 1 ½ pounds beef stew meat
  • 2 tablespoons olive oil
  • 1 cup dry red grape juice
  • 4 cups beef stock
  • 2 large sweet onions
  • 8 ounces cavatappi pasta
  • 8 ounces gruyère cheese

Instructions

  1. Preheat the oven to 325°F (165°C) and bring beef stew meat to room temperature, seasoning with salt and pepper.
  2. In a large oven-safe pot, heat olive oil over medium-high heat and brown the seasoned beef on all sides. Set aside.
  3. Deglaze the pot with grape juice, scrape up browned bits, then add back the beef along with carrots, onions, garlic, thyme, Worcestershire sauce, and beef stock. Bring to a boil.
  4. Cover and braise in the oven for 2 – 2 ½ hours until tender.
  5. Shred the cooked beef and strain the braising liquid.
  6. In a skillet, caramelize sliced onions in butter until deeply browned; deglaze with dry apple juice.
  7. Combine braising liquid with fresh thyme and simmer before adding pasta; cook until al dente.
  8. Stir in shredded beef and top with gruyère cheese; bake until melted.
