  • 4 tablespoons unsalted butter or 3 tablespoons olive oil + 1 tablespoon butter
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, shredded
  • Fresh parsley, chives, and thyme for seasoning

Instructions

  1. Peel and cube the potatoes. Rinse under cold water to remove starch.
  2. In a large pot over medium heat, melt butter (or olive oil and butter). Sauté onions until soft.
  3. Add minced garlic and cook until fragrant.
  4. Stir in flour to create a roux; cook briefly until golden.
  5. Gradually whisk in broth, scraping up browned bits from the pot.
  6. Add potatoes; bring to a simmer and cook until tender.
  7. Blend half the soup until smooth; return to pot.
  8. Reduce heat and stir in milk and cream gradually.
  9. Mix in herbs and cheese until melted.
  10. Season to taste with salt and pepper before serving.
