  • 2 large bananas (mashed)
  • 1 large zucchini (shredded)

Instructions

  2. In a bowl, whisk together flour, coconut sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the egg, Greek yogurt, and mashed bananas until smooth.
  4. Combine the wet and dry mixtures gently; fold in shredded zucchini and any chosen mix-ins.
  5. Pour the batter into the prepared loaf pan and bake for 45-55 minutes or until a skewer comes out mostly clean.
