2 ripe bananas, mashed

½ cup plain Greek yogurt

Instructions
Step 1: Prep the Oats
If using whole rolled oats, blend in a food processor or blender to make fine oat flour.
Step 2: Preheat Oven and Prepare Pan
Preheat oven to 350°F (175°C).
Grease or line an 8×8-inch pan with parchment paper for easy removal.
Step 3: Mix the Wet Ingredients
In a large bowl, whisk together mashed bananas, yogurt, eggs, honey (or maple syrup), and vanilla extract until smooth.
Step 4: Add Dry Ingredients
In a separate bowl, mix oat flour, baking powder, baking soda, salt, and cinnamon.
Stir the dry ingredients into the wet mixture until fully combined.
Step 5: Fold in Blueberries
Toss blueberries with 1 tbsp flour (to prevent sinking) and gently fold them into the batter.
Step 6: Bake the Cake
Pour the batter into the prepared pan.
Sprinkle with extra blueberries, oats, or nuts if desired.
Bake for 28–32 minutes or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool fully.
Step 7: Slice and Serve
