Ingredients

• 3 cups cooked shredded chicken (rotisserie works great)
• 1 (20 oz) bag frozen shredded hashbrowns, thawed
• 1 cup sour cream
• 1 can (10.5 oz) cream of chicken soup (or homemade substitute)
• 1½ cups shredded cheddar cheese
• ½ cup milk
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp salt
• ½ tsp black pepper
• 1 tbsp olive oil or melted butter
• Optional topping: ½ cup crushed cornflakes or Ritz crackers mixed with 2 tbsp melted butter


Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish and set aside.

Step 2: Mix the Casserole Base
In a large mixing bowl, combine sour cream, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
Stir until smooth.
Add in the thawed hashbrowns, shredded chicken, and 1 cup of cheddar cheese.
Mix until evenly combined.

Step 3: Assemble the Casserole
Pour the mixture into the prepared baking dish and spread evenly.
Top with the remaining ½ cup cheddar cheese.
If using, sprinkle the buttery crushed cracker or cornflake topping evenly over the cheese layer.

Step 4: Bake Until Golden
Bake uncovered for 40–45 minutes, or until hot and bubbly and the top is golden brown.
If the top is browning too quickly, loosely tent with foil halfway through.

Step 5: Cool & Serve
Let the casserole rest for 5–10 minutes before serving.
Garnish with chopped parsley or green onions if desired.
