For the Skillet:

  • 1 lb (450g) ground turkey

  • 2 medium sweet potatoes, peeled and diced into small cubes

  • 1 red bell pepper, diced

  • 1 small red onion, diced

  • 2 cloves garlic, minced

  • 2 tbsp olive oil (divided)

  • 1 tsp smoked paprika

  • ½ tsp ground cumin

  • ½ tsp chili powder

  • Salt and black pepper to taste

  • ¼ cup water or low-sodium chicken broth (optional, for softening potatoes)

For Garnish:

  • Chopped fresh parsley or cilantro

  • Sliced avocado or a dollop of Greek yogurt

  • Fresh lime wedges


Instructions

Step 1: Sauté the Sweet Potatoes

  1. Heat 1 tbsp olive oil in a large skillet over medium heat.

  2. Add diced sweet potatoes and cook for 8–10 minutes, stirring occasionally, until they start to soften and brown slightly.

  3. Add a splash of water or broth and cover with a lid for 3–5 minutes to help them cook through faster.

  4. Transfer the sweet potatoes to a plate and set aside.

Step 2: Cook the Turkey & Veggies

  1. In the same skillet, heat the remaining 1 tbsp olive oil.

  2. Add diced red onion and bell pepper, and cook for 2–3 minutes until slightly softened.

  3. Add minced garlic and cook for 30 seconds until fragrant.

  4. Add ground turkey and break it apart with a spatula.

  5. Cook for 5–7 minutes, or until browned and fully cooked through.

Step 3: Season the Skillet

  1. Once the turkey is no longer pink, season with smoked paprika, cumin, chili powder, salt, and pepper.

  2. Stir well to coat the turkey evenly in the spices.

Step 4: Combine Everything

  1. Add the sweet potatoes back into the skillet and stir to combine.

  2. Cook for 2–3 more minutes, allowing the flavors to meld.

  3. Taste and adjust seasoning as needed.

Step 5: Garnish and Serve

 

  1. Turn off the heat and garnish with chopped parsley or cilantro.

  2. Serve warm with avocado slices, Greek yogurt, or a squeeze of lime juice on top.
