  • 4 tablespoons olive oil (divided)
  • 1 pound ground turkey (94%)
  • 1 bell pepper (diced)
  • 1/2 yellow onion (diced)
  • 1/2 cup canned black beans
  • 1/2 cup canned corn
  • 1 batch turkey seasoning or 1 pack of taco seasoning
  • 2 tablespoons tomato paste
  • 2 ½ cups Oaxaca or Monterey Jack Cheese
  • 10 medium sized flour tortillas
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon table salt
  • ½ teaspoon onion powder
  • ½ teaspoon pepper

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until hot.
  2. Add the ground turkey, diced bell pepper, and onion to the skillet. Cook until the turkey is browned and any excess water has evaporated.
  3. Mix in the black beans, corn, turkey seasoning, tomato paste, and 1/4 cup of water. Cook for about 2 minutes or until the mixture thickens slightly. Set aside.
  4. Place a tortilla on a clean surface. Brush oil on one side of the tortilla. Flip it over so the oiled side is down. Sprinkle 2 tablespoons of cheese on half of the tortilla. Add some of the ground turkey mixture followed by another 2 tablespoons of cheese on top. Fold the tortilla in half gently pressing to seal.
  5. Heat another skillet over medium-high heat. Transfer the folded quesadilla to this skillet and cook until golden brown on one side. Flip it carefully and cook until the other side is also golden brown and crispy while ensuring that the cheese has melted inside.
  6. Remove from skillet once done; let cool briefly before cutting into wedges. Repeat this process with remaining tortillas and filling.
