- 1 pound ground beef (80-90%)
- 1 yellow onion (diced)
- 3 jalapeños (diced and de-seeded)
- 3–4 cups red enchilada sauce
- 1 16-oz can refried beans
- 2 cups shredded cheese (cheddar or Mexican blend)
- 6 large tortillas
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse rice until water runs clear, then cook with 1 1/3 cups of water on low heat for about 15 minutes.
- In a skillet over medium heat, brown ground beef with diced onion and jalapeños until cooked through; drain excess fat.
- Mix in ½ cup of enchilada sauce into the beef mixture.
- Spread ¼ cup of enchilada sauce in a baking dish; layer tortillas with refried beans, cheese, rice, and beef mixture before rolling tightly.
- Place rolled burritos seam-side down in the dish; top with remaining enchilada sauce and cheese.
