For the Chicken Marinade:

  • 2 lbs boneless, skinless chicken breast or thighs, cut into -inch pieces

  • 2 tbsp olive oil

  • 2 tbsp ranch seasoning mix (store-bought or homemade)

  • 1 tbsp lemon juice

  • 4 cloves garlic, minced

  • ½ tsp salt

  • ½ tsp black pepper

  • ¼ cup grated Parmesan cheese

For Grilling & Serving:

  • Wooden or metal skewers

  • ¼ cup shredded Parmesan (for garnish)

  • Fresh chopped parsley (optional)

  • Extra ranch dressing for dipping

  • Lemon wedges (optional)


Instructions

Step 1: Marinate the Chicken

  1. In a large bowl, combine olive oil, ranch seasoning, lemon juice, minced garlic, salt, pepper, and grated Parmesan.

  2. Add chicken pieces and toss until evenly coated.

  3. Cover and marinate in the refrigerator for at least 30 minutes, preferably 2–4 hours for best flavor.

Step 2: Prepare the Skewers
4. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
5. Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.

Step 3: Preheat the Grill
6. Preheat your grill (or grill pan) to medium-high heat. Lightly oil the grates or surface to prevent sticking.

Step 4: Grill the Skewers
7. Place skewers on the grill and cook for 10–12 minutes, turning every 2–3 minutes.
8. Grill until the chicken is fully cooked and lightly charred (internal temp should be 165°F).
9. During the last minute, sprinkle additional shredded Parmesan over the skewers to melt slightly.

 

Step 5: Serve & Garnish
10. Remove from grill and transfer to a serving platter.
11. Garnish with fresh parsley and serve with extra ranch dressing or lemon wedges.

Notes

Use Thighs for Extra Juiciness – Chicken thighs are more forgiving and flavorful.
Don’t Skip the Marinade – The longer it sits, the deeper the flavor.
Space the Chicken – Avoid overcrowding the skewers for even grilling.
