Ingredients
- 1 pound lean ground beef
- 1 envelope taco seasoning
- ¼ cup water
- 15 ounces nacho cheese sauce
- 2 cups prepared Mexican rice
- 2 tablespoons mayonnaise
- 1 tablespoon chipotle sauce
- Sour cream
- Tortilla strips
- 4 burrito-sized tortillas
- 2 cups shredded Colby jack cheese
Instructions
- In a medium skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.
- Add taco seasoning and water to the beef, cooking for about 5 minutes until slightly thickened.
- In a mixing bowl, combine mayonnaise and chipotle sauce until blended.
- Assemble each tortilla with nacho cheese, a quarter of the beef mixture, and ½ cup of Mexican rice. Drizzle with chipotle sauce, add sour cream and tortilla strips, then fold tightly.
- Heat a non-stick skillet over medium heat and sprinkle some shredded cheese to create a base. Place the burritos seam-side down on the cheese and cook until golden brown.
- Flip the burritos using a spatula, adding more cheese to the skillet if desired, and cook until both sides are crispy.
