  • 1 envelope taco seasoning
  • ¼ cup water
  • 15 ounces nacho cheese sauce
  • 2 cups prepared Mexican rice
  • 2 tablespoons mayonnaise
  • 1 tablespoon chipotle sauce
  • Sour cream
  • Tortilla strips
  • 4 burrito-sized tortillas
  • 2 cups shredded Colby jack cheese

Instructions

  1. In a medium skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.
  2. Add taco seasoning and water to the beef, cooking for about 5 minutes until slightly thickened.
  3. In a mixing bowl, combine mayonnaise and chipotle sauce until blended.
  4. Assemble each tortilla with nacho cheese, a quarter of the beef mixture, and ½ cup of Mexican rice. Drizzle with chipotle sauce, add sour cream and tortilla strips, then fold tightly.
  5. Heat a non-stick skillet over medium heat and sprinkle some shredded cheese to create a base. Place the burritos seam-side down on the cheese and cook until golden brown.
