Ingredients
For the Fries:
-
4 medium russet potatoes (or use frozen thick-cut fries)
-
2 tbsp olive oil
-
1 tsp dried oregano
-
½ tsp garlic powder
-
½ tsp paprika (optional)
-
Salt and black pepper to taste
For Topping:
-
½ cup crumbled feta cheese
-
2 tbsp fresh parsley or dill, chopped
-
Zest and juice of ½ lemon
-
Optional: sliced red onion, kalamata olives, diced tomatoes
Instructions
Step 1: Prep the Potatoes
-
If using fresh potatoes, wash and cut into thick fries (about ½ inch).
-
Soak them in cold water for 20 minutes to remove excess starch.
-
Drain, pat dry thoroughly with paper towels.
Step 2: Bake or Air Fry the Fries
-
Preheat oven to 220°C (425°F) or air fryer to 200°C (400°F).
-
Toss fries with olive oil, oregano, garlic powder, paprika, salt, and pepper.
-
Spread evenly on a baking sheet or place in air fryer basket.
-
Bake for 25–30 minutes (or air fry for 18–20 minutes), flipping halfway, until golden and crispy.
Step 3: Add the Feta and Finish
-
While fries are hot, transfer to a serving bowl or plate.
-
Sprinkle generously with crumbled feta.
-
Add lemon zest, a squeeze of fresh lemon juice, and chopped parsley.
-
Top with optional extras like tomatoes, onions, or olives for a loaded version.
Step 4: Serve Immediately
-
Serve hot with tzatziki, hummus, or your favorite dipping sauce.
-
Enjoy as a snack, side dish, or party platter centerpiece.
Notes
Soak and Dry – Soaking helps crisp them up; drying is crucial before baking.
Use a Hot Oven – High temperature gives that crispy exterior.
Season While Hot – Helps herbs and cheese stick to the fries.
Try Air Fryer – Faster and extra crispy without excess oil.
Use Good Feta – A creamy, authentic feta makes all the difference.
