Ingredients
For the Greek Chicken:

1 ½ lbs boneless, skinless chicken thighs or breasts

3 tbsp lemon juice

3 garlic cloves, minced

For the Tzatziki Sauce:

1 cup Greek yogurt (plain, full-fat or low-fat)

½ cucumber, grated and squeezed dry

1 clove garlic, minced

1 tbsp lemon juice

1 tbsp olive oil

1 tbsp fresh dill, chopped (or 1 tsp dried)

Salt and pepper to taste
For the Bowl Base:

2 cups cooked brown rice, quinoa, or couscous

1 cup cherry tomatoes, halved

1 cucumber, chopped

½ red onion, thinly sliced

1 cup shredded lettuce or mixed greens

½ cup Kalamata olives (optional)

½ cup crumbled feta cheese
Instructions
Step 1: Marinate the Chicken
In a bowl, mix olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.
Add chicken and toss to coat. Cover and marinate in the fridge for at least 30 minutes (or up to 8 hours).
Step 2: Make the Tzatziki Sauce
Combine Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper in a bowl.
Mix well, taste, and adjust seasoning.
Cover and refrigerate until ready to use.
Step 3: Cook the Chicken
Heat a grill pan or skillet over medium-high heat.
