- ½ cup (100g) chocolate chips – For melty chocolate pockets.
- ½ cup (125g) Biscoff spread – Melted for easy swirling.
- 6–8 Biscoff cookies – Crushed for extra crunch (optional).
Instructions
Step 1: Prepare the Pan & Preheat
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
Step 2: Make the Brownie Batter
- In a bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
- Add eggs and vanilla extract, whisking until fully combined.
- Sift in cocoa powder, flour, salt, and baking powder. Stir gently until just combined.
- Fold in chocolate chips for extra gooeyness.
Step 3: Layer and Swirl the Biscoff
- Pour half of the brownie batter into the prepared pan.
- Drizzle half of the melted Biscoff spread over the batter.
- Add the remaining brownie batter on top, spreading evenly.
- Drizzle the rest of the Biscoff spread on top and use a toothpick or knife to create swirls.
- (Optional) Sprinkle crushed Biscoff cookies over the top for extra crunch.
Step 4: Bake the Brownies
- Bake for 28-32 minutes, or until the edges are set but the center is still slightly gooey.
- Let the brownies cool in the pan for at least 20 minutes before slicing.
Step 5: Slice & Serve
- Lift the brownies out using the parchment paper.
