  • ½ teaspoon baking powder – Helps the brownies stay soft and fudgy.
  • ½ cup (100g) chocolate chips – For melty chocolate pockets.
  • ½ cup (125g) Biscoff spread – Melted for easy swirling.
  • 68 Biscoff cookies – Crushed for extra crunch (optional).

Instructions

Step 1: Prepare the Pan & Preheat

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.

Step 2: Make the Brownie Batter

  1. In a bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  2. Add eggs and vanilla extract, whisking until fully combined.
  3. Sift in cocoa powder, flour, salt, and baking powder. Stir gently until just combined.
  4. Fold in chocolate chips for extra gooeyness.

Step 3: Layer and Swirl the Biscoff

  1. Pour half of the brownie batter into the prepared pan.
  2. Drizzle half of the melted Biscoff spread over the batter.
  3. Add the remaining brownie batter on top, spreading evenly.
  4. Drizzle the rest of the Biscoff spread on top and use a toothpick or knife to create swirls.
  5. (Optional) Sprinkle crushed Biscoff cookies over the top for extra crunch.

Step 4: Bake the Brownies

  1. Bake for 28-32 minutes, or until the edges are set but the center is still slightly gooey.
  2. Let the brownies cool in the pan for at least 20 minutes before slicing.

Step 5: Slice & Serve

  1. Lift the brownies out using the parchment paper.
  2. Cut into squares and enjoy the gooey, chocolatey, Biscoff-filled goodness!
