- 7 oz vegan cream cheese
- 6 oz vegan chicken cubes
- 3 cups vegetable broth
- 2 Tbsp olive oil
- 3 cloves garlic, diced
- 1/3 cup onions, finely chopped
- 2 ribs celery, chopped
- 1/4 cup carrots, shredded
- 1 handful spinach
- Salt and pepper to taste
Instructions
- In a saucepan, heat the olive oil over medium heat. Add the diced garlic, celery, and onions; sauté for about 2 minutes until fragrant.
- Stir in the vegan chicken cubes and season with salt and pepper. Cook for an additional 3 minutes until slightly browned.
