  • 7 oz vegan cream cheese
  • 6 oz vegan chicken cubes
  • 3 cups vegetable broth
  • 2 Tbsp olive oil
  • 3 cloves garlic, diced
  • 1/3 cup onions, finely chopped
  • 2 ribs celery, chopped
  • 1/4 cup carrots, shredded
  • 1 handful spinach
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat the olive oil over medium heat. Add the diced garlic, celery, and onions; sauté for about 2 minutes until fragrant.
  2. Stir in the vegan chicken cubes and season with salt and pepper. Cook for an additional 3 minutes until slightly browned.
  3. Pour in the vegetable broth and bring to a gentle boil. Add the gnocchi and cook for 2–3 minutes until they float.
  4. Stir in the vegan cream cheese, sour cream, shredded carrots, Italian herbs, and spinach. Cook for another 2 minutes until heated through.
