Instructions

  2. In a stand mixer, beat butter and brown sugar until creamy. Add molasses, egg yolk, and vanilla; mix until combined.
  3. Gradually add the flour mixture to the wet ingredients until fully incorporated. Shape into a disk and wrap in plastic wrap; chill for at least 2 hours.
  4. Preheat oven to 350°F (175°C). Roll out dough to about ¼-inch thickness and cut into desired shapes.
  5. Place cookies on parchment-lined baking sheets and bake for 7–9 minutes or until just set. Let cool before decorating with icing.
