- 1 tsp baking powder
- 350g plain flour
- For the Topping: 50g unsalted butter, at room temperature
- 40g light brown sugar
- 75g plain flour
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 100g icing sugar
- 1 tsp water
Instructions
- Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a bowl, cream together unsalted butter and light brown sugar until fluffy. Add sunflower oil, egg, and vanilla; mix well.
- In another bowl, whisk together flour and spices. Gradually combine dry mixture into wet ingredients until dough forms.
- For the topping, mix unsalted butter, light brown sugar, plain flour, and spices until crumbly.
- Scoop tablespoons of cookie dough onto the prepared baking sheet and sprinkle with topping.
- Bake for about 14 minutes or until golden around edges. Cool on a wire rack.
