Ingredients
For the Cake Batter:
-
1 cup unsalted butter, softened
-
1 cup granulated sugar
-
1 tsp vanilla extract
-
4 large eggs
-
2½ cups all-purpose flour
-
2 tsp baking powder
-
¼ tsp salt
-
½ cup milk
For the Blueberry Topping:
-
2½ cups fresh or frozen blueberries
-
2 tbsp granulated sugar (for sprinkling)
-
1 tbsp flour (optional, helps if using frozen berries)
For the Finishing Touch:
-
Powdered sugar for dusting
-
Whipped cream or vanilla ice cream (optional for serving)
Instructions
Step 1: Preheat the Oven and Prepare the Pan
-
Preheat your oven to 350°F (175°C).
-
Grease a 9-inch springform pan and line the bottom with parchment paper.
-
If using frozen blueberries, toss them in 1 tbsp flour to prevent sinking.
Step 2: Cream the Butter and Sugar
-
In a large bowl, beat the softened butter and sugar until light and fluffy (about 3–4 minutes).
-
Add vanilla extract and mix again.
Step 3: Add the Eggs
-
Add eggs one at a time, beating well after each addition.
-
Scrape down the sides of the bowl to ensure even mixing.
Step 4: Mix the Dry Ingredients
-
In a separate bowl, sift together flour, baking powder, and salt.
-
Gradually add the dry ingredients to the wet mixture, alternating with milk.
-
Mix until just combined—don’t overmix.
Step 5: Assemble the Cake
-
Pour the batter into the prepared pan and smooth the top.
-
Evenly distribute the blueberries over the batter.
-
Sprinkle 2 tbsp sugar over the top to create a lightly caramelized crust.
Step 6: Bake the Cake
-
Bake in the preheated oven for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
-
Check at the 40-minute mark and cover loosely with foil if the top is browning too quickly.
-
Let the cake cool in the pan for 15 minutes, then transfer to a cooling rack.
Step 7: Finish and Serve
-
Once the cake has completely cooled, dust with powdered sugar.
-
Slice and serve with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.
Notes
Room Temp Ingredients – Ensures a smooth batter and even baking.
Don’t Overmix – Mix until just combined to keep the cake light and fluffy.
Use Fresh Berries When Possible – They provide the best flavor and texture.
Cool Completely Before Slicing – This helps set the crumb and makes for cleaner slices.
Springform Pan Preferred – Makes removing the cake much easier.
