Ingredients
- 2 lbs lamb rib chops (8 count)
- 5 plump garlic cloves (pressed)
- 4 Tbsp olive oil (divided)
- 2 Tbsp fresh parsley (or 2 tsp dried parsley)
- 2 tsp Tabasco original red pepper sauce
- 1 tsp fine sea salt
- 1 tsp black pepper
- 1/4 tsp dried thyme
- 1/2 cup chicken stock
- 2 Tbsp unsalted butter
Instructions
- Pat lamb chops dry and season generously with salt and pepper.
- Heat 2 tablespoons of olive oil in a cast iron skillet over medium-high heat. Sear the seasoned chops for about 3–4 minutes on each side until browned.
- Lower the heat to medium-low, add pressed garlic around the chops, drizzle with remaining olive oil, and sprinkle parsley and thyme. Cook for another minute until fragrant.
- Remove the chops and let them rest. Pour chicken stock into the skillet, scraping up brown bits, then stir in softened butter to create a smooth sauce.
- Serve the lamb chops plated with pan sauce drizzled on top, garnished with extra parsley if desired.
