  • 2 lbs lamb rib chops (8 count)
  • 5 plump garlic cloves (pressed)
  • 4 Tbsp olive oil (divided)
  • 2 Tbsp fresh parsley (or 2 tsp dried parsley)
  • 2 tsp Tabasco original red pepper sauce
  • 1 tsp fine sea salt
  • 1 tsp black pepper
  • 1/4 tsp dried thyme
  • 1/2 cup chicken stock
  • 2 Tbsp unsalted butter

Instructions

  1. Pat lamb chops dry and season generously with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a cast iron skillet over medium-high heat. Sear the seasoned chops for about 3–4 minutes on each side until browned.
  3. Lower the heat to medium-low, add pressed garlic around the chops, drizzle with remaining olive oil, and sprinkle parsley and thyme. Cook for another minute until fragrant.
  4. Remove the chops and let them rest. Pour chicken stock into the skillet, scraping up brown bits, then stir in softened butter to create a smooth sauce.
  5. Serve the lamb chops plated with pan sauce drizzled on top, garnished with extra parsley if desired.
