Ingredients

• 2 lbs Yukon Gold or Russet potatoes, thinly sliced
• 2 large yellow onions, thinly sliced
• 2 tbsp butter
• 1 tbsp olive oil
• 1 packet (1 oz) French onion soup mix
• 1 cup beef broth (or vegetable broth)
• 1 cup shredded Gruyère or Swiss cheese
• ½ tsp garlic powder
• ¼ tsp black pepper
• 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
• Optional: chopped parsley for garnish


Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Grease a 9×13-inch baking dish or casserole pan with butter or nonstick spray.

Step 2: Caramelize the Onions
In a large skillet, heat the butter and olive oil over medium-low heat.
Add the sliced onions and cook slowly for 15–20 minutes, stirring often, until they are deep golden and caramelized.
Add a splash of broth if they begin to stick too much.

Step 3: Prepare the Potatoes
While the onions cook, slice your potatoes into ¼-inch thick rounds using a knife or mandoline for even cooking.
Place them in a large mixing bowl and toss with garlic powder, black pepper, and the French onion soup mix.

Step 4: Layer the Dish
Spread half the sliced potatoes into the prepared baking dish.
Top with half the caramelized onions and half the shredded cheese.
Repeat with remaining potatoes, onions, and cheese.

Step 5: Add Broth and Seasonings
Pour the broth evenly over the layered potatoes.
Sprinkle fresh thyme leaves across the top for added flavor and aroma.

Step 6: Bake Covered
Cover the dish tightly with aluminum foil and bake for 35 minutes.

Step 7: Uncover & Brown
Remove the foil and bake for an additional 20–25 minutes, or until the potatoes are tender and the top is golden and bubbly.
If desired, broil for the last 2–3 minutes to get a crispier top.

Step 8: Cool & Garnish
Let the dish rest for 5–10 minutes before serving.
Garnish with chopped parsley or extra thyme if desired.
