- Kosher salt and ground black pepper
- Olive oil

- 4 large yellow onions, thinly sliced

- ¾ cup white grape juice
- 1 tablespoon all-purpose flour
- 3 cups beef broth
- 2 tablespoons Worcestershire sauce
- Fresh herbs: bay leaves, rosemary, thyme
- 1 cup freshly shredded Gruyere cheese
Instructions

- Dry the chuck roast and season with salt and pepper.
