  • 3 lbs beef chuck roast
  • 4 yellow onions
  • 4 garlic cloves
  • 1 cup dry white grape juice
  • 6 cups beef stock
  • 1 demi baguette
  • Grated gruyere cheese
  • 2 tablespoons neutral oil
  • 3 tablespoons butter
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons all-purpose flour
  • 2 fresh bay leaves
  • 8 sprigs thyme
  • 3 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the beef into 2-inch cubes and season with salt and pepper.
  3. Slice the onions thinly using a mandoline or knife.
  4. In a Dutch oven, heat oil over medium heat and sear the beef until browned on all sides. Remove and set aside.
  5. Add butter and sliced onions to the pot, cooking until caramelized (30–40 minutes).
  6. Stir in dijon mustard, Worcestershire sauce, and flour; then add grape juice and simmer.
  7. Gradually pour in beef stock, add bay leaves, thyme bundle, and return seared beef to the pot.
  8. Cover tightly and braise in the oven for about 3 hours until tender.
  9. Toast baguette slices drizzled with olive oil in the oven for 8–10 minutes.
  10. Serve braised beef topped with toasted baguette slices, grated gruyere cheese, and fresh thyme.
