  • 2 tsp coarse sea salt
  • 1 tsp black pepper
  • 23 tbsp olive oil, or as needed
  • ½ cup dry grape juice, divided
  • 2 tbsp unsalted butter
  • 5 large onions, thinly sliced

  • 1 tsp brown sugar
  • 1 tbsp fresh thyme
  • 4 garlic cloves, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp tomato paste, optional
  • 1 tbsp flour
  • 2½ cups beef broth
  • 2 bay leaves
  • 1 white baguette, sliced
  • olive oil as needed, to brush on the bread
  • 2 tbsp Dijon mustard, or as needed
  • 1 ½ cups Gruyere cheese, coarsely grated
  • 3 tbsp Parmesan cheese, freshly grated
  • ½ tbsp fresh thyme, to garnish

Instructions

  1. Gather and prepare your ingredients by cubing the chuck steak and slicing the onions.
  2. In a Dutch oven, heat olive oil over medium-high heat. Brown the seasoned beef in batches and set aside.
  3. Add butter to the same pot and caramelize onions with a pinch of salt for 20-30 minutes.
  4. Stir in brown sugar, thyme, garlic, grape juice, Worcestershire sauce, Dijon mustard, and flour; cook briefly until fragrant.
  5. Add browned beef back to the pot along with beef broth and bay leaves; bring to a simmer.
  6. Cover and let simmer on low heat for about 90 minutes until beef is tender.
  7. Preheat broiler; brush baguette slices with olive oil and spread Dijon mustard before topping with cheese.
  8. Broil until cheese is bubbly and golden brown.
  9. Serve stew topped with cheesy bread slices and garnish with fresh thyme.
