Instructions

  1. Sear the Beef: Heat olive oil in a Dutch oven over medium-high heat. Season short ribs with salt and pepper, sear on all sides until browned (about 3-4 minutes per side). Remove and set aside.
  2. Caramelize Onions: In the same pot, reduce heat to medium. Add butter and sliced onions; cook for 25-30 minutes until golden brown. Stir in minced garlic and cook for another minute.
  3. Build the Soup: Return short ribs to the pot; add beef broth, Worcestershire sauce, bay leaf, and thyme. Simmer on low for 2-3 hours until meat is tender. Shred meat from bones and return it to the pot.
  4. Prepare Topping: Preheat broiler. Ladle soup into oven-safe bowls; top each with toasted bread and cheese. Broil for 2-3 minutes until cheese is melted.
