Ingredients
For the Cookies:

2 large egg yolks (plus 1 more for egg wash)

1 tsp vanilla extract

2 cups all-purpose flour

½ tsp fine sea salt

Instructions
Step 1: Cream the Butter & Sugar

In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (about 2–3 minutes).

Add 2 egg yolks and vanilla extract, mixing until fully combined.
Step 2: Add the Dry Ingredients

In a separate bowl, whisk together the flour and salt.

Gradually add the dry mixture to the wet ingredients and mix until a soft dough forms.
Step 3: Chill the Dough

Divide dough in half, flatten into disks, and wrap in plastic wrap.

Chill in the refrigerator for at least 1 hour, or until firm enough to roll.
Step 4: Roll and Cut

Preheat oven to 350°F (175°C).

On a lightly floured surface, roll dough to ¼-inch thickness.

Cut into circles using a cookie cutter (2 to 2.5-inch size is ideal).

Place cookies 1 inch apart on a parchment-lined baking sheet.
Step 5: Egg Wash & Bake

In a small bowl, whisk the remaining egg yolk with 1 tbsp milk.

Lightly brush the tops of the cookies with the egg wash for a golden finish.
