Instructions

Step 1: Prepare the Ingredients
If using fresh pineapple, peel and dice the pineapple into small pieces. If using canned, make sure it’s drained well. Dice the ham into small cubes.

Step 2: Whisk the Eggs
In a mixing bowl, whisk the eggs together with the coconut milk, salt, and black pepper. Whisk until the eggs are fully combined and slightly frothy, which helps create a fluffy texture.

Step 3: Cook the Ham and Pineapple
In a nonstick skillet, melt the butter over medium heat. Add the diced ham and cook for 1-2 minutes until slightly browned. Add the pineapple to the skillet and cook for another 2 minutes, stirring occasionally. This allows the pineapple to release some of its sweetness and heat up.

Step 4: Scramble the Eggs
Reduce the heat to low and pour the beaten eggs into the skillet with the ham and pineapple mixture. Let the eggs cook undisturbed for a few seconds. Then, gently stir with a spatula, moving from the edges to the center to form soft curds. Continue to cook, stirring occasionally, until the eggs are just set but still slightly creamy.

Step 5: Serve and Enjoy
Remove the eggs from the skillet and transfer them to a plate. Garnish with chopped green onions for added freshness (optional). Serve immediately with toast, fresh fruit, or a side of roasted potatoes.
