For the Cloud Bread:

  • 3 large eggs, separated

  • ⅓ cup full-fat cottage cheese (small curd or blended smooth)

  • ¼ tsp cream of tartar (helps stabilize egg whites)

  • ¼ tsp salt

  • ½ tsp garlic powder (optional, for savory flavor)

Optional Toppings:

  • Everything bagel seasoning

  • Sesame or poppy seeds

  • Fresh herbs or grated Parmesan


Instructions

Step 1: Preheat the Oven
Preheat your oven to 300°F (150°C).
Line a baking sheet with parchment paper.

Step 2: Separate the Eggs
Carefully separate egg whites from yolks, placing whites in one large bowl and yolks in another.
Make sure no yolk gets into the whites for best results when whipping.

Step 3: Whip the Egg Whites
Add cream of tartar and salt to the egg whites.
Using an electric mixer, beat until stiff peaks form—about 3–5 minutes.
The whites should be glossy and hold their shape when you lift the beaters.

Step 4: Mix the Yolks & Cottage Cheese
In the second bowl, mix the egg yolks with cottage cheese.
If you prefer a smoother texture, blend the cottage cheese before mixing.
Add garlic powder or other optional seasonings here if desired.

Step 5: Combine the Mixtures
Gently fold the yolk mixture into the whipped egg whites using a spatula.
Do this slowly and carefully to keep as much air in the batter as possible.
Mix just until combined—don’t overwork it.

Step 6: Shape the Bread
Scoop 6–8 mounds of batter onto the prepared baking sheet.
Use the back of a spoon to gently smooth into rounds about ½ inch thick.
Sprinkle with optional toppings if using.

Step 7: Bake
Bake for 25–30 minutes, or until golden on the edges and set in the center.
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a rack.

Step 8: Cool Completely
Cloud bread firms up as it cools. Let it cool fully before storing or serving.

Notes
