  • 1 cup almond flour (120g)
  • 3 tablespoons sugar or granulated sugar-free sweetener
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon or pumpkin pie spice
  • 1/3 cup pumpkin puree
  • 1 egg or flax egg
  • Optional: mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together almond flour, sugar, baking powder, salt, and cinnamon until well combined.
  3. Add in pumpkin puree and egg (or flax egg) and stir until just mixed. Fold in mini chocolate chips if desired.
  4. Pour the batter into the prepared muffin cups, filling each about two-thirds full.
  5. Bake for 10 minutes for mini muffins or approximately 15 minutes for regular-sized muffins.
  6. Allow to cool slightly in the tin before transferring to a wire rack to cool completely.
