Ingredients
- 1 cup almond flour (120g)
- 3 tablespoons sugar or granulated sugar-free sweetener
- 1/2 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon or pumpkin pie spice
- 1/3 cup pumpkin puree
- 1 egg or flax egg
- Optional: mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a large bowl, whisk together almond flour, sugar, baking powder, salt, and cinnamon until well combined.
- Add in pumpkin puree and egg (or flax egg) and stir until just mixed. Fold in mini chocolate chips if desired.
- Pour the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake for 10 minutes for mini muffins or approximately 15 minutes for regular-sized muffins.
- Allow to cool slightly in the tin before transferring to a wire rack to cool completely.
