Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper for easy cleanup.
Step 2: Toast the English Muffins
Place the split English muffins cut-side up on the baking sheet.
Lightly spray with olive oil spray.
Bake for 3-5 minutes until slightly toasted.
Step 3: Cook the Eggs and Sausage
While the muffins are toasting, scramble or fry the eggs in a small skillet.
If using uncooked turkey sausage, cook it in the skillet until fully browned.
Step 4: Assemble the Breakfast Pizzas
Remove the toasted muffins from the oven.
Spread about 1 tablespoon of pizza sauce on each muffin half.
Top with a sprinkle of mozzarella cheese.
Add scrambled eggs, sausage, and your choice of vegetables.
Sprinkle a little more mozzarella cheese over the toppings.
Season with black pepper and red pepper flakes if desired.
Step 5: Bake the Breakfast Pizzas
Return the assembled pizzas to the oven.
Bake for 8-10 minutes, or until the cheese is melted and bubbly.
Step 6: Garnish and Serve
Remove from the oven and top with fresh basil, grated Parmesan, or a drizzle of hot sauce if you like.
Serve warm and enjoy!
Notes
Use Pre-Cooked Ingredients – Make sure any meat or veggies that need cooking are ready before assembling.
Don’t Overload – Too many toppings can make the muffins soggy.
Mix and Match – Try different cheeses like cheddar, Monterey Jack, or feta for new flavor twists.
Make It Healthier – Use whole grain English muffins and load up on veggies for extra nutrition.
