  • 1 cup cottage cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup chopped spinach
  • 1/4 cup finely sliced green onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup crumbled turkey turkey bacon
  • 1/4 cup chopped turkey

Instructions

  1. Preheat your oven to 180C (350F) and lightly grease a 12-cup muffin tin or line it with silicone liners.
  2. In a blender, mix the eggs, cottage cheese, salt, and pepper until smooth.
  3. Distribute the spinach, green onion, bell pepper, turkey turkey bacon, and turkey evenly among the muffin cups.
  4. Pour the blended egg mixture over the ingredients in each cup until they are about three-quarters full.
  5. Bake for 17-19 minutes or until set and lightly golden on top.
  6. Let cool for a few minutes before removing from the tin. Serve warm or store in an airtight container.
