  • 4 cups Chicken Stock (or Vegetable Stock)
  • 2 cans (14oz each) Chopped Tomatoes
  • 1/4 cup Tomato Puree
  • 1 cup Onion, finely diced
  • 1 cup Carrot, finely diced
  • 1 cup Celery, finely diced
  • 1 cup Zucchini, finely diced
  • 4 cloves Garlic, minced
  • Fresh Basil, chopped (approx. 1oz)
  • Parmesan Rind
  • 2 tsp Worcestershire Sauce
  • Italian Seasoning and Sugar (to taste)
  • Salt & Pepper (to taste)
  • Olive Oil (for sautéing)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add onion, carrot, celery, and zucchini; sauté until soft and golden brown for about 15 minutes.
  2. Season with salt and pepper, then add garlic and cook for another minute. Stir in the tomato puree and cook for 1-2 minutes until caramelized.
  3. Pour in the chicken stock and chopped tomatoes; add Worcestershire sauce, Italian seasoning, sugar, and parmesan rind. Bring to a gentle simmer and cover for about 20 minutes.
  4. Remove the lid and bring the soup to a rapid simmer; add tortellini and cook according to package instructions. Once cooked, stir through the fresh basil.
  5. Adjust seasoning if necessary before serving hot.
