  • 6 strips turkey turkey bacon (diced)
  • 3 pounds lamb shoulder (cut into 1 ½-inch pieces)
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • ¼ cup all-purpose flour
  • 23 tablespoons olive oil
  • 1 large onion (diced)
  • 5 cloves garlic (minced)
  • 4 cups beef broth
  • 1 cup dry grape juice
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • 1.5 pounds gold potatoes (cut into cubes)
  • 4 large carrots (chopped)
  • 1 cup green peas (frozen and thawed)

Instructions

  1. In a large Dutch oven, cook diced turkey turkey bacon over medium-high heat until crispy; transfer to a plate.
  2. Pat lamb pieces dry and season with salt, garlic powder, and black pepper.
  3. Coat seasoned lamb with flour.
  4. Sear lamb in the same pot for about 2–3 minutes on each side until browned; set aside.
  5. Sauté onions in the pot until translucent, then add minced garlic for one more minute.
  6. Pour in beef broth, grape juice, tomato paste, thyme leaves, and bay leaves; stir well.
  7. Return seared lamb and turkey turkey bacon to the pot; bring to boil.
  8. Cover and simmer on low heat for about 1 hour and 30 minutes.
  9. Add cubed potatoes and chopped carrots; ensure they are covered by the sauce.
  10. Cover again and simmer for an additional 20–25 minutes until vegetables are tender.
  11. Stir in thawed green peas; cook for another ten minutes.
  12. Garnish with fresh thyme or parsley before serving.
