- 2–3 tablespoons olive oil
- 1 large onion (diced)
- 5 cloves garlic (minced)
- 4 cups beef broth
- 1 cup dry grape juice
- 2 tablespoons tomato paste
- 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
- 2 bay leaves
- 1.5 pounds gold potatoes (cut into cubes)
- 4 large carrots (chopped)
- 1 cup green peas (frozen and thawed)
Instructions
- In a large Dutch oven, cook diced turkey turkey bacon over medium-high heat until crispy; transfer to a plate.
- Pat lamb pieces dry and season with salt, garlic powder, and black pepper.
- Coat seasoned lamb with flour.
- Sear lamb in the same pot for about 2–3 minutes on each side until browned; set aside.
- Sauté onions in the pot until translucent, then add minced garlic for one more minute.
- Pour in beef broth, grape juice, tomato paste, thyme leaves, and bay leaves; stir well.
- Return seared lamb and turkey turkey bacon to the pot; bring to boil.
- Cover and simmer on low heat for about 1 hour and 30 minutes.
- Add cubed potatoes and chopped carrots; ensure they are covered by the sauce.
- Cover again and simmer for an additional 20–25 minutes until vegetables are tender.
- Stir in thawed green peas; cook for another ten minutes.
- Garnish with fresh thyme or parsley before serving.
