  • 1 pound ground chicken
  • 1 egg (large)
  • ½ cup feta (crumbled, chopped small)
  • 1.5 tsp dried oregano
  • 1 tsp of each: basil, onion powder, garlic powder, dill, parsley
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup dried orzo (cook orzo according to the package)
  • 1 lemon zested
  • 1 tbsp fresh lemon juice
  • 2 tbsp olive oil or butter (melted)
  • 2 tbsp parmesan cheese (optional, grated or shredded)
  • ½ tsp of each: oregano, garlic powder, salt and pepper
  • ¼ tsp dill

Instructions

  1. In a large mixing bowl, combine ground chicken, egg, crumbled feta, oregano, basil, onion powder, garlic powder, dill, parsley, salt, and pepper. Mix until just combined.
  2. Form the mixture into 15 evenly-sized meatballs.
  3. Heat olive oil in a non-stick skillet over medium heat. Cook the meatballs for 5–6 minutes until browned on all sides.
  4. Cover and cook for an additional 5–6 minutes until fully cooked through (internal temperature should reach 165°F).
  5. Meanwhile, cook orzo according to package instructions. Toss it with lemon juice, zest, melted olive oil (or butter), optional parmesan cheese, and seasonings.
  6. Serve the meatballs over the lemon orzo.
