  • 1 teaspoon olive oil
  • 23 garlic cloves (minced)
  • 1 cup chopped onion
  • 2 cups low-sodium broth (vegetable or chicken)
  • 1 can (15.5 oz) Great Northern beans (drained and rinsed)
  • 1 can (15.5 oz) black beans (drained and rinsed)
  • 1 can (15.5 oz) diced tomatoes with chilis (drained)
  • ½ cup whole kernel corn
  • 1 cup shredded Colby and Monterey Jack cheese
  • 3 oz cream cheese
  • 5 oz jumbo lump crab
  • 5 oz lobster meat
  • 1 pound shrimp (peeled and deveined)
  • Seafood seasoning, to taste
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon red cayenne pepper (if spicy is preferred)
  • Salt and pepper, to taste

Instructions

  1. In a Dutch oven or stock pot over medium-high heat, add olive oil. Sauté the chopped onions for 3–4 minutes until translucent; then stir in minced garlic.
  2. Add the broth, beans, diced tomatoes with chilis, homemade chili seasoning, and optional Better Than Bouillon to the pot. Mix well.
  3. Lower the heat to medium-low and cover to simmer for 15–20 minutes.
  4. Season the seafood mix with seafood seasoning while waiting for the chili to meld.
  5. Stir in shredded cheese, corn, cream cheese, and seasoned seafood into the simmering pot until combined.
  6. Cook for an additional 5–6 minutes on medium heat until cheese melts completely.
