- 2–3 garlic cloves (minced)
- 1 cup chopped onion
- 2 cups low-sodium broth (vegetable or chicken)
- 1 can (15.5 oz) Great Northern beans (drained and rinsed)
- 1 can (15.5 oz) black beans (drained and rinsed)
- 1 can (15.5 oz) diced tomatoes with chilis (drained)
- ½ cup whole kernel corn
- 1 cup shredded Colby and Monterey Jack cheese
- 3 oz cream cheese
- 5 oz jumbo lump crab
- 5 oz lobster meat
- 1 pound shrimp (peeled and deveined)
- Seafood seasoning, to taste
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon red cayenne pepper (if spicy is preferred)
- Salt and pepper, to taste
Instructions
- In a Dutch oven or stock pot over medium-high heat, add olive oil. Sauté the chopped onions for 3–4 minutes until translucent; then stir in minced garlic.
- Add the broth, beans, diced tomatoes with chilis, homemade chili seasoning, and optional Better Than Bouillon to the pot. Mix well.
- Lower the heat to medium-low and cover to simmer for 15–20 minutes.
- Season the seafood mix with seafood seasoning while waiting for the chili to meld.
- Stir in shredded cheese, corn, cream cheese, and seasoned seafood into the simmering pot until combined.
- Cook for an additional 5–6 minutes on medium heat until cheese melts completely.
