Ingredients

Scale
  • 2 1/4 cups graham cracker crumbs
  • 3 tbsp sugar
  • 1 tsp ground cinnamon
  • 1/2 cup melted salted butter
  • 24 ounces cream cheese
  • 1 cup sugar
  • 3 tbsp all-purpose flour
  • 3/4 cup sour cream
  • 1 1/2 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 3 large eggs
  • 2 large apples, chopped
  • 1/4 cup light brown sugar
  • 1 teaspoon ground cinnamon (for topping)
  • Sprinkle of lemon juice
  • 1/2 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and ground cinnamon; stir in melted butter until crumbly. Press into the bottom of a greased 9×13-inch baking pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar and flour, mixing well. Stir in sour cream, vanilla extract, and ground cinnamon; then add eggs one at a time.
  3. Pour cheesecake filling over the crust and bake for about 50 minutes until edges are set but center is slightly jiggly. Cool at room temperature before refrigerating for at least four hours.
  4. For the apple topping, sauté chopped apples with brown sugar, ground cinnamon, nutmeg, and lemon juice until tender but not mushy; let cool slightly.
  5. Once chilled, spread caramel sauce over the cheesecake layer and top with the apple mixture.
