For the Casserole:

  • 2 cups cooked rice (white or brown)

  • 3 cups broccoli florets (fresh or frozen and thawed)

  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup

  • 1 cup milk

  • 1½ cups shredded cheddar cheese (divided)

  • ½ cup sour cream

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt

  • ¼ tsp black pepper

For the Topping (Optional but Recommended):

  • ½ cup crushed Ritz crackers or breadcrumbs

  • 1 tbsp melted butter

  • Extra shredded cheese (for melty topping)


Instructions

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×13 inch baking dish with nonstick spray or a light coating of oil.

Step 2: Prepare the Broccoli
If using fresh broccoli, steam or blanch for 2–3 minutes until just tender.
If using frozen, thaw and pat dry to remove excess moisture.

Step 3: Mix the Base
In a large bowl, combine the cooked rice, steamed broccoli, 1 cup of shredded cheddar, sour cream, garlic powder, onion powder, salt, and pepper.

Step 4: Make the Sauce
In a separate bowl or saucepan, whisk together the cream of soup and milk until smooth.
Pour over the rice and broccoli mixture and stir until evenly combined.

Step 5: Assemble the Casserole
Pour the mixture into the prepared baking dish and spread evenly.
Top with the remaining ½ cup of shredded cheese.

Step 6: Add the Topping (Optional)
In a small bowl, mix crushed crackers or breadcrumbs with melted butter.
Sprinkle over the casserole for a crunchy, golden finish.

Step 7: Bake
Bake uncovered for 25–30 minutes, or until the casserole is hot and bubbly and the cheese is melted.
If the top browns too quickly, loosely cover with foil during the last 10 minutes.

Step 8: Cool & Serve
Let the casserole sit for 5–10 minutes before serving to help it set.
Scoop into bowls or serve alongside your favorite protein.
