  • 4 large baking potatoes
  • 1 pound lean ground beef
  • 1 small onion (chopped)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1/2 cup sour cream (plus extra for serving)
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 2 green onions (sliced)
  • 1/2 cup salsa

Instructions

  1. Preheat the oven to 475°F. Scrub the potatoes and prick them multiple times with a fork.
  2. Place the potatoes on a baking sheet and bake for 60 to 75 minutes until soft.
  3. In a skillet over medium heat, cook the ground beef and chopped onion until browned. Add taco seasoning and water, stirring for one minute.
  4. After baking, cool the potatoes slightly, slice off the tops, and scoop out most of the insides into a bowl. Mix in sour cream and milk until smooth, then fold in three-quarters of the beef mixture and cheese.
  5. Spoon the filling back into each potato skin, top with remaining cheese, and bake at 350°F for another 20 to 25 minutes.
  6. Serve topped with green onions, salsa, and extra sour cream if desired.
