Ingredients
For the Breakfast Pie:
-
3 large croissants (day-old preferred), torn into large pieces
-
1 cup cooked breakfast sausage or chopped cooked bacon
-
6 large eggs
-
¾ cup milk (whole or 2%)
-
½ cup heavy cream (for extra richness)
-
1 cup shredded cheddar or Swiss cheese
-
½ cup shredded mozzarella
-
¼ tsp garlic powder
-
¼ tsp onion powder
-
¼ tsp salt
-
⅛ tsp black pepper
-
2 tbsp chopped fresh chives or green onions (optional)
Optional Add-Ins:
-
½ cup diced bell peppers
-
½ cup sautéed spinach or mushrooms
-
Hot sauce or red pepper flakes for heat
Instructions
Step 1: Preheat & Prep
-
Preheat your oven to 350°F (175°C).
-
Grease a 9-inch pie dish or baking dish with butter or nonstick spray.
Step 2: Layer the Croissants
3. Tear croissants into large chunks and spread them evenly in the baking dish.
4. Sprinkle cooked sausage or bacon over the croissants.
5. Add any optional veggies or extras here if using.
Step 3: Make the Egg Mixture
6. In a mixing bowl, whisk together eggs, milk, cream, garlic powder, onion powder, salt, and pepper.
7. Stir in shredded cheeses and chives or green onions.
Step 4: Assemble & Soak
8. Pour the egg mixture evenly over the croissants and meat.
9. Press down gently with a spatula to help everything soak up the custard.
10. Let sit for 10–15 minutes to fully absorb (or cover and refrigerate overnight for baking the next day).
Step 5: Bake the Breakfast Pie
11. Cover loosely with foil and bake for 25 minutes.
12. Remove foil and bake for another 15–20 minutes, until puffed, golden, and set in the center.
13. Let rest for 5–10 minutes before slicing.
Step 6: Serve Warm
14. Slice into wedges or squares and serve with fresh fruit, salad, or a cup of coffee.
Notes
Use Day-Old Croissants – They absorb the custard better and keep their shape.
Don’t Overbake – The center should be just set; it will finish firming up as it cools.
Make It Ahead – Assemble the night before and refrigerate. Bake in the morning for stress-free brunch.
Add Veggies – Sauté mushrooms, spinach, or peppers before adding for best texture.
Top with Extras – Add avocado slices, hot sauce, or a sprinkle of fresh herbs.
