  • 1.5 pounds boneless, skinless chicken breasts (or thighs)
  • 1 (1 oz) packet taco seasoning
  • 1 (10 oz) can Rotel (strained)
  • Juice of 1 lime
  • Tortillas (flour or corn) and assorted toppings (pico de gallo, guacamole, sour cream, cheese, cilantro)

Instructions

  1. Spray a 6 or 7-quart crockpot with non-stick spray.
  2. Lay the chicken flat in the bottom of the crockpot. Sprinkle taco seasoning over the chicken, then add strained Rotel and lime juice.
  3. Cover and cook on high for 3 to 4 hours or low for 7 to 8 hours until fully cooked and easily shredded.
  4. Drain excess liquid, leaving about half a cup for moisture. Shred the chicken using two forks.
  5. Warm tortillas in a skillet or microwave. Fill each tortilla with shredded chicken and top as desired.
