  • 23 pounds beef chuck (diced into 1-inch pieces)
  • 2 tablespoons olive oil
  • ½ teaspoon black pepper
  • ½ tablespoon garlic powder
  • ½ tablespoon onion powder
  • 1 Au Jus gravy packet
  • ½ packet Lipton onion soup mix
  • 14.5 ounces beef broth
  • 10.5 ounces cream of mushroom soup
  • 1 tablespoon cornstarch

Instructions

  1. In a large bowl, combine the diced beef with olive oil, black pepper, garlic powder, and onion powder. Toss until evenly coated.
  2. Heat olive oil in a skillet over medium-high heat and sear the seasoned beef until golden brown on all sides.
  3. In another bowl, mix together beef broth, cream of mushroom soup, half of the Lipton onion soup mix, and Au Jus gravy packet until well combined.
  4. Place the seared beef in the crockpot and pour the gravy mixture over it. Stir gently to incorporate.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. To thicken the gravy, mix cornstarch with cold water in a small bowl until dissolved and add it to the crockpot during the last 30 minutes of cooking.
