- 1 large onion (diced)
- 5 garlic cloves (minced)
- 2 lb chuck roast (cut into 4 pieces)
- Salt and pepper to taste
- 1 can (28 oz) crushed tomatoes
- 1/4 cup red grape juice
- 1.5 cups beef broth
- 3 tablespoons tomato paste
- 3 sprigs fresh thyme
- 2 dried bay leaves
- 16 oz pappardelle noodles
- Garnish with parmesan cheese and fresh thyme
Instructions
- Chop onion and mince garlic, then place them in the crockpot with olive oil. Set on high heat.
- Season the chuck roast pieces generously with salt and pepper.
- Place seasoned roast on top of onions, then pour crushed tomatoes, grape juice, and beef broth over it. Add tomato paste, thyme, and bay leaves.
- Cover and cook on high for about 6 hours until beef is tender.
- Shred the beef in the sauce using two forks. Keep warm while preparing pasta.
- Cook pappardelle noodles according to package directions until al dente.
- Serve pasta topped with ragu and garnish with grated parmesan and fresh thyme.
