Description

This easy slow cooker recipe allows the beef to become incredibly tender while the tomatoes and herbs meld into a savory sauce that’s perfect for pasta or polenta.


Ingredients

  • 1 large onion (diced)
  • 5 garlic cloves (minced)
  • 2 lb chuck roast (cut into 4 pieces)
  • Salt and pepper to taste
  • 1 can (28 oz) crushed tomatoes
  • 1/4 cup red grape juice
  • 1.5 cups beef broth
  • 3 tablespoons tomato paste
  • 3 sprigs fresh thyme
  • 2 dried bay leaves
  • 16 oz pappardelle noodles
  • Garnish with parmesan cheese and fresh thyme

Instructions

  1. Chop onion and mince garlic, then place them in the crockpot with olive oil. Set on high heat.
  2. Season the chuck roast pieces generously with salt and pepper.
  3. Place seasoned roast on top of onions, then pour crushed tomatoes, grape juice, and beef broth over it. Add tomato paste, thyme, and bay leaves.
  4. Cover and cook on high for about 6 hours until beef is tender.
  5. Shred the beef in the sauce using two forks. Keep warm while preparing pasta.
  6. Cook pappardelle noodles according to package directions until al dente.
  7. Serve pasta topped with ragu and garnish with grated parmesan and fresh thyme.
