  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • ½ cup low-sodium soy sauce
  • 3 tbsp light brown sugar
  • 1 ½ cups matchstick carrots
  • 2 scallions, sliced
  • 3 cups low-sodium beef stock
  • 2 packages dry ramen noodles (discard seasoning)
  • 1 lb broccoli florets

Instructions

  1. Heat vegetable oil in a large sauté pan over medium-high heat. Brown beef slices in batches for about 5 to 7 minutes; drain excess fat.
  2. In a mixing bowl, whisk together garlic, ginger, soy sauce, and brown sugar.
  3. In the slow cooker, combine browned beef, matchstick carrots, scallions, and pour in the sauce along with beef stock. Stir gently.
  4. Cook on LOW for about 5 hours until beef is tender.
  5. Mix cornstarch with water; add broccoli and cornstarch mixture to the slow cooker. Nestle ramen noodles into the broth.
  6. Continue cooking on LOW for an additional 30 minutes. Stir well before serving.
