- 3 tbsp light brown sugar
- 1 ½ cups matchstick carrots
- 2 scallions, sliced
- 3 cups low-sodium beef stock
- 2 packages dry ramen noodles (discard seasoning)
- 1 lb broccoli florets
Instructions
- Heat vegetable oil in a large sauté pan over medium-high heat. Brown beef slices in batches for about 5 to 7 minutes; drain excess fat.
- In a mixing bowl, whisk together garlic, ginger, soy sauce, and brown sugar.
- In the slow cooker, combine browned beef, matchstick carrots, scallions, and pour in the sauce along with beef stock. Stir gently.
- Cook on LOW for about 5 hours until beef is tender.
- Mix cornstarch with water; add broccoli and cornstarch mixture to the slow cooker. Nestle ramen noodles into the broth.
- Continue cooking on LOW for an additional 30 minutes. Stir well before serving.
