These Crispy Parmesan Potatoes are a deliciously addictive side dish, golden and crunchy on the outside with a soft, tender interior. Coated in a flavorful blend of Parmesan, garlic, and herbs, these potatoes are baked to perfection and make a fantastic addition to any meal.
Ingredients
- 1 1/2 lbs baby potatoes or small Yukon Gold potatoes – Bite-sized and perfect for roasting.
- 3 tablespoons olive oil – For crispiness and flavor.
- 1/2 cup grated Parmesan cheese – Adds savory richness.
- 1 teaspoon garlic powder – For garlic flavor.
- 1 teaspoon dried oregano – Adds a Mediterranean touch.
- 1/2 teaspoon dried thyme – For a slightly earthy flavor.
- 1/4 teaspoon crushed red pepper flakes (optional) – For a little kick.
- Salt and black pepper to taste – For seasoning.
- Fresh parsley, chopped (optional) – For garnish.
Instructions
Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
Step 2: Prepare the Potatoes
Wash the baby potatoes and cut them in half (or quarters if they’re larger). If you prefer a crispier exterior, you can also leave the skins on.
Step 3: Toss the Potatoes
In a large mixing bowl, toss the halved potatoes with olive oil, garlic powder, dried oregano, dried thyme, crushed red pepper flakes (if using), salt, and black pepper. Make sure the potatoes are evenly coated with the oil and seasonings.
Step 4: Add the Parmesan
Sprinkle the grated Parmesan cheese over the seasoned potatoes and toss gently to coat. The cheese will adhere to the oil and form a crispy coating as the potatoes roast.
Step 5: Roast the Potatoes
Spread the coated potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside.
Step 6: Serve & Enjoy
Remove the potatoes from the oven and transfer them to a serving dish. Garnish with fresh chopped parsley for a pop of color, if desired.
Notes
- Use fresh Parmesan: Grated Parmesan from a block will create the best crispy crust. Pre-grated Parmesan may not work as well.
- Don’t overcrowd the baking sheet: Give the potatoes plenty of space to ensure they roast evenly and get crispy.
- Add extra flavor: Try adding fresh minced garlic to the mix or sprinkle the potatoes with extra Parmesan during the last few minutes of baking for an extra cheesy crunch.
- For extra crispiness: You can broil the potatoes for 1-2 minutes at the end of roasting, but watch them carefully to avoid burning.
