Ingredients

• 1 cup cottage cheese (well-drained)
• ½ cup shredded mozzarella or cheddar cheese
• ¼ cup grated parmesan
• 1 egg
• ½ cup breadcrumbs (plus more for coating)
• 2 tbsp chopped fresh parsley or chives
• ½ tsp garlic powder
• ½ tsp onion powder
• ¼ tsp black pepper
• ¼ tsp salt
• 2 tbsp flour (if needed for binding)
• Olive oil spray or 2 tbsp oil (for baking or frying)


Instructions

Step 1: Drain the Cottage Cheese
Place cottage cheese in a fine mesh strainer or cheesecloth and press out excess moisture.
Too much liquid will prevent the mixture from holding together.

Step 2: Mix the Filling
In a bowl, combine drained cottage cheese, shredded cheese, parmesan, egg, breadcrumbs, parsley, garlic powder, onion powder, salt, and pepper.
If the mixture is too wet to shape, add a little flour or more breadcrumbs.

Step 3: Shape the Delights
Form the mixture into small patties or balls—about 1 to 1½ inches in size.
Roll in additional breadcrumbs for an extra crispy exterior.

Step 4: Choose Your Cooking Method

For Baking:
Preheat oven to 400°F (200°C).
Place patties on a parchment-lined baking sheet.
Lightly spray with olive oil.
Bake for 15–18 minutes, flipping halfway, until golden and crisp.

For Pan-Frying:
Heat 2 tbsp oil in a skillet over medium heat.
Cook patties for 3–4 minutes per side, until golden brown.
Drain on paper towels.

Step 5: Serve & Enjoy
Serve hot with your favorite dipping sauce—ranch, marinara, or a spicy aioli.

Drain Well – Moisture is the enemy of crispness—get the cottage cheese as dry as possible.
