Ingredients

Scale
  • 2 lbs little potatoes (halved)
  • 1 cup + 2 tsp white vinegar
  • 1 tbsp salt
  • 2 tbsp butter
  • Freshly cracked black pepper
  • Flaked sea salt
  • Chopped chives (optional for garnish)

Instructions

  1. Boil the Potatoes: In a large pot, combine halved little potatoes, 1 cup of white vinegar, and salt. Add water until it covers the potatoes by about 2 inches. Bring to a rolling boil, then reduce heat to medium-low and simmer for about 20 minutes or until fork-tender.
  2. Drain and Dry: Use a strainer to drain excess water from the cooked potatoes. Let them sit for 1-2 minutes to steam off moisture.
  3. Fry the Potatoes: Heat butter in a cast iron skillet over medium-high heat. Add drained potatoes, season with black pepper and additional salt if desired. Fry until golden brown and crispy on all sides.
  4. Serve: Transfer the fried potatoes to a serving dish, drizzle with remaining vinegar, sprinkle with flaked sea salt, and garnish with chives if desired.
