  • 2/3 cup dry white grape juice
  • 2 cups low-sodium chicken stock
  • 1/2 cup half-and-half
  • 8 oz sun-dried tomatoes (packed in oil)
  • 1/2 cup freshly grated parmesan cheese
  • Zest and juice of 1 lemon
  • Fresh basil for garnish
  • Italian seasoning

Instructions

  1. In a deep skillet over medium-low heat, melt the butter and sauté the minced garlic for about 1 minute.
  2. Add the white grape juice and simmer until reduced by half (3–5 minutes).
  3. Stir in the chicken stock, half-and-half, Italian seasoning, sun-dried tomatoes, cracked pepper, and salt; bring to a low boil.
  4. Add the spaghetti or angel hair, allowing it to sit briefly before gently stirring into the sauce.
  5. Cook until al dente (about 5–7 minutes), then stir in parmesan cheese and finish with lemon zest and juice.
  6. Garnish with fresh basil before serving.
