Instructions

  2. Stir in onions, carrots, celery, sundried tomatoes, and minced garlic; sauté until vegetables are translucent (about 3–4 minutes).
  3. Sprinkle flour and stir well to combine; add tomato paste if using.
  4. Gradually whisk in chicken broth while stirring continuously; deglaze the pot.
  5. Bring to a boil; add pasta and remaining Italian seasoning. Cover and simmer for about 20 minutes or until chicken is cooked through and pasta is al dente.
  6. Stir in heavy cream, spinach, and Parmesan cheese; simmer for an additional five minutes.
